Conceived in an effort to produce a sour beer quickly, without having to wait months or years for the bugs to naturally work their magic, as well as maintain a relatively clean beer stream throughout cellaring and packaging, and not contaminating an entire brewery with souring organisms, kettle sours achieve both ends while maintaining the craft, creativity, drinkability, and flexibility.
